The destemmed, pressed grapes are vinified at a constant temperature of 26°C (78.8°F) after a cold maceration at 12°C (53.6°F) to obtain optimal extraction of the flavors. The maceration time is long to ensure the stability and longevity of the wine. Regular pumping over (twice a day) enables the components of the wine to develop in optimal conditions and brings suppleness to the tannins.
