The Petites Merveilles wine comes from our Rocamadour vineyard. We prepare this vine to get very low yield, about 40 Hl/Ha. The Rocamadour terroir is perfect to grow the viognier with a clay-limestone soil and a high temperature during the day, and cold temperature during the night in order to keep all the flavors.
The first nose is bright dominated by white peach and floral flavors. Swirling, it releases an explosion of aromas with white fruits (apricot, peach) and floral notes (white flowers). The nose is very complex and elegant.
The wine shows its character right at the attack. This mouth is fresh, superbly well-balanced and long. Apricot and peach fruits, white flowers, and few smoky notes combined to get a complex wine where the last word remains pleasure.
We hand pick the viognier, the grapes travel with a refrigerated truck to the winery. We press the cold grapes with a membrane press with Nitrogen cover, like this, we can preserve the grape juice from oxydation. We rack the juice to remove the heavy lees and fill the barrels for the alcoholic fermentation. This one is about 15 days à 18°C. When the alcoholic fermentation is done, we start to stir the wine twice a week during 9 months.
